Module summary

The module introduces students to the application of the science of nutrition in health and disease. You will gain a general insight into the area; discovering the key concepts of nutritional science. 

The module will provide a greater understanding thereby allowing students with little or no background in nutritional science to progress to undertake a degree in Human Nutrition or Dietetics at level 4.

During this module you will:
1. Develop greater awareness of nutrition science, appreciating the role that diet and lifestyle choices have in promoting health. 
2. Be introduced to major food groups and their nutritional composition.
3. Gain a greater understanding of the concept that individual diet and lifestyle choices have in influencing health and disease.
4. Develop an awareness of the career opportunities open to Registered Nutritionists and Dietitians.

Syllabus

• An introduction to psychology in health.
• Understand the career opportunities available within the world of nutritional science, dietetics.
• Introduce nutritional science, the five food groups and key nutrients.
• Explore the concept of energy balance and relate it to the food we eat.
• Identify the digestion and absorption of food and basic gastrointestinal tract anatomy and physiology.
• Discover how nutrition can relate to health and consideration of different major health concerns.
• Introduce concepts relating to nutritional advice and health promotion.

Balance of independent study and scheduled teaching activity

The module is primarily lecture (24 hours) and tutorial based (12 hours) supported by directed study and web-based material. There will be support of web based blended learning utilising the virtual learning environment to support the students’ progress. In total there will be 4 contact hours per week.

Learning outcomes

On successful completion of this module students will be able to:
1. Describe how energy is derived from food, the major food groups and constituents of a healthy diet.
2. Discuss how behaviour and society influences lifestyle and diet choices and in turn affect health and disease.
3. Describe health promotion techniques related to nutrition and dietetics.
4. Demonstrate an awareness of the career opportunities available within nutrition and dietetics and related professions.

Assessment strategy

This module will be assessed by:

1. A series of 5 on-line tests of 30 minutes in duration, testing the student’s knowledge of the taught component (weeks 3,6,8,10 and 12).
An average mark of the 5 tests will form the final module mark.

To pass the module students need to achieve a minimum aggregate mark of
40%.
